...Illivia Leone de Castris Negroamaro is produced from vineyards located in the municipality of Salice Salentino. The harvest takes place manually towards the end of September, and in addition to the Negroamaro grapes, small quantities of Malvasia Nera di Lecce are also collected. Once the harvest is complete, the clusters transferred to the winery will be vinified as red wine, and after the fermentation period, the Negroamaro Illivia matures in large oak barrels for two months before being marketed.
