Schiacciata soppressata is one of the quintessential Calabrian cured meats. It is made from the finest parts of the pig's thigh, which are chopped into medium pieces and mixed with lard, also chopped into medium pieces. Characteristic Calabrian spices are added to the mixture. Everything is then stuffed into casings and left to mature for over 45 days at a constant temperature and humidity. Halfway through the maturation process, the sausage is pressed to flatten it, which is how it gets its name 'soppressata' or 'schiacciata,' taking on the distinctive shape that we all know.
