Dried on hanging stems, they are then beaten to extract all the seeds. Next, a meticulous sorting of the seeds and branch fragments is done. The seeds are then sun-dried. Usage: Wild fennel is regularly used in various cuisines, such as that of the Mediterranean basin. It is often paired with fish or chicken. It also complements roasted vegetables or vegetable purées well. You can add a few fennel seeds to your mixed salads. Wild fennel can also be used in curries or as an infusion.
