The wine: Douce Folie derives its lovely name from the eponymous plot where its grapes are meticulously hand-harvested. This elegant rosé Champagne comes from the Côte des Bar and offers great finesse on the palate. Notes of small red fruits (cherry, strawberry, raspberry) unfold during tasting, accompanied by aromas of green apple, citrus, and a hint of hazelnut. The Extra Brut dosage imparts a lot of freshness to the ensemble, which is also supported by a creamy bubble that ultimately wins us over. A superb grower Champagne, perfect for both aperitif and dining! The estate: Located in Bar-sur-Seine within the Côte des Bar, the La Borderie estate spans 11 hectares and has been run since 2013 by siblings Simon & Marie Normand. They succeeded their parents with a primary goal in mind: to vinify the grapes from their finest plots themselves.
