Ohmic heating is a gentle, continuous process for warming products, especially for solid items like fruits, vegetables, spices, and other foodstuffs. The heating occurs through electric current, with the product serving as an electrical resistance. Compared to conventional cooking methods, the product is not heated via a hot surface, but rather uniformly throughout its entire cross-section. The use of hot-cool water systems and hot water modules is a significant advantage in terms of energy efficiency and also offers improved process management compared to the direct use of steam as a heating medium. Hot-cool water systems provide optimal conditions for the highest product quality and the preservation of solid structure, especially for horizontal stirrers. The automatic quick-release manhole is excellently suited for frequent opening and closing operations.
