Extra virgin coconut oil is the highest quality oil from the first pressing, cold and unrefined. It is obtained by pressing the flesh of the coconut palm fruit. It has a consistent texture and a white color at temperatures up to 26 °C. Below 26 °C, it has a semi-liquid consistency. It is resistant to high temperatures, making it ideal for frying. Unlike animal fats, these are medium-chain saturated fats that are converted directly into energy by the body and not stored as fat or deposits. The remaining 7% consists of unsaturated fatty acids (Omega-9 and Omega-6 linoleic acid). It is these components that make the oil so valuable. Lauric acid, which is the main component of the oil (50%), has antibacterial, antiviral, and antifungal properties. Coconut oil is not only useful in the kitchen.
