BIO Agave Syrup

Agave syrup is a sweetening substance that can serve as an alternative to white sugar. It dissolves easily, and its consistency resembles flowing honey, making it ideal for preparing cocktails and desserts. The process of producing syrup begins with extracting juice from the core of the agave plant. The core resembles a pineapple in shape and weighs between 25 kg and 75 kg. The juice is then heated and filtered. This process leads to the hydrolysis of complex sugars into simple sugars (primarily fructose). As a result of heating, the juice transforms into a liquid with a consistency similar to flowing honey. What does agave syrup look like? It can range in color from light golden to dark amber. The darker the color, the richer the aroma. This depends on the degree of heating and filtration. Another method of production involves using an enzyme found in one species of mold – black mold. Agave syrup is primarily produced in Mexico.
