Matcha, a powder with an emerald green color, is an exceptionally exclusive and high-quality green tea made exclusively from Tencha leaves. It is used in the tea-drinking ceremony – chanoyu. It is known as the queen of green teas. How does it differ from regular green tea? It is sweeter and brighter. This is all due to the fact that the bushes intended for Matcha tea production are shaded from the sun with special mats before harvesting. This leads to an increased production of amino acids, which contribute to the deeper and unique aroma of Matcha tea. The shading results in a higher amount of chlorophyll being produced in the leaves, which over time transforms into catechin. The leaves are then collected, dried, and ground into a powder.
