Duck legs confit in their own fat, salt. Meat sourced from France. CHEF'S ADVICE: Open the can and place it in a water bath to melt the fat. Grill the legs in the oven or in a pan, and enjoy with porcini mushrooms or potatoes sautéed in the fat. Confit is the dish of the Southwest! A well-grilled duck leg in the oven becomes wonderfully crispy. It’s high gastronomy accessible to all of us. For this confit, I have the ducks specially raised by Mr. Marty in Plaigne, a small village nestled in the hills around Castelnaudary.
