Vietnamese Rice

Rice is classified according to the length of the grains: - Round rice: average length less than or equal to 5.2 mm - Length/width ratio less than 2. - Medium or semi-long rice: average length greater than 5.2 mm and less than or equal to 6 mm - Length/width ratio less than 3. - Long rice: average length greater than 6 mm. Rice is also classified based on the percentage of broken grains (grains broken during various stages of processing), which includes: - with a maximum broken rice content of 5%. - Rice: - containing 15% or less broken rice. - Second choice rice: - with a maximum broken rice content of 50%. In the case of parboiled rice, the acceptable limit percentages for broken grains correspond to the above percentages plus 10% in absolute value. Broken grains are separated from other grains and are used for animal feed, rice flakes, or for making coffee.
