Consumers expect an optimal consistency, a crunchy bite, and an appealing appearance when enjoying delicate sausage specialties. To meet these expectations, an ideally tailored cutter aid that ensures a stable binding of meat and water is essential. A standard product usually does not provide the desired stabilization. Therefore, we create a suitable cutter aid for you to optimally stabilize your end product – of course, taking your specifications into account – with or without phosphates, etc. If an even stronger water binding is required, a thickening agent such as carrageenan, starch, or xanthan can be incorporated into a compound. Upon request, a combination product including curing components can also be assembled. This additionally guarantees a secure curing process and supports color retention. We are also happy to provide you with a complete mixture including flavor.
