Don Manuel is a Specialty coffee grown among the mountain trails that traverse the majestic Central Colombian mountain range, surrounded by giant bamboo and fruit trees, offering a coffee with a creamy body, aromas of cherry, vanilla, and sugar cane, and sweet flavors of caramel, melon, peach palm, along with an exquisite medium acidity. Roast: Medium. The roasting was extended for a few moments after the first crack of the coffee bean and beyond the monk's robe roast to achieve a cup with a bit more body at the expense of the acidity found in a lighter roast.
